Introduction:
What is a Urdaburger?
The Urdaburger is the modern version of the original burger, which has a patty made of urad dal, a staple food in Indian cuisine. Urad dal is very flavorful, with a deep, nutty flavor and smooth texture, which makes it perfect for a heavy, meaty patty. With fresh vegetables, sour condiments, and a soft bun, the burger is one you will never tire of.
Ingredients
For the Urad Dal Patty:
- 1 cup urad dal (split black gram), soaked for 4-6 hours
- 1 small onion, finely chopped
- 2-3 garlic cloves, minced
- 1-inch ginger, grated
- 1 green chili, finely chopped (optional for spiciness)
- 1/2 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 2 tbsp chopped cilantro (coriander leaves)
- Salt to taste
- 2-3 tbsp breadcrumbs or oats (for binding)
- Oil for frying
- For the Burger Assembly:
- 4 burger buns (whole wheat or your preference)
- 4 lettuce leaves
- 1 tomato, sliced
- 1 sliced onion
- 4 cheese slices (optional)
- Your choice of burger sauce (hot chutney, ketchup, or mayonnaise)
Instructions
Step 1: Prepare the Urad Dal Patty
Drain the soaked urad dal and grind it coarse in a food processor or blender. Add water if needed, but be sure that the mixture is not too thin.
Transfer the paste to a bowl and mix in chopped onion, garlic, ginger, green chili, turmeric, cumin, coriander, garam masala, cilantro, and salt. Mix well.
Add breadcrumbs or oats to the mixture so that it can hold together. The mixture should be complex enough to form patties.
Divide the mixture into four equal parts and form them into spherical patties.
Heat oil in a pan on medium heat. Shallow-fry the patties until golden brown (3-4 minutes on each side). Set aside.
Step 2: Assemble the Urdaburger
Split the burger buns into half and toast lightly.
Spread your preferred sauce on the bottom half of the bun.
Place a lettuce leaf, a urad dal patty, a slice of cheese (if using), tomato slices, and onion rings.
Top with the other half of the bun and press gently to hold everything together.
Serving Suggestions
Serve your Urdaburger with crispy sweet potato fries, a fresh salad, or a cooling raita. Pair it with a chilled glass of lemonade or your favorite beverage for the ultimate meal experience.
